Kozani Saffron

Crocus, the red Greek saffron, is one of the most famous products of Kozani. The specific variety is considered one of the best in the world and is used widely in cooking, pharmacy and cosmetology. The crocus is cultivated since the 17th century in this area, around the village of Krokos, which is the seat of the cooperative of saffron producers. Until today the collection of the flowers took place every summer and their initial processing takes place traditionally, by hand, a painful process since for a kilo of saffron they need approximately 150,000 flowers.
